This report contains information regarding the federally inspected slaughter by species and day by the ending of the specified by species and day, as well as data on meat production, including live weight and dressed weight, by species and class. Species included in the report are: cattle, calves, hogs, sheep, goats, equine, and bison.
This report covers bison carcasses and cuts. Data is presented on slaughter numbers, carcasses, and meat cuts. Bison slaughter numbers are presented on a weekly basis. Carcasses are categorized by age and sex with information on number, weight, and prices. Meat is categorized based on cut, fresh or frozen, and wholesale or direct; each category contains the price and weight of the cut. Also included are price trends compared to the prior month as well as volume of Canadian imports of live bison and bison meat.
