This special report provides an overview of the United States slaughter industry, encompassing both poultry and red meat production. Included in the report is data on number of heads, average live weight, average dressed weight, number of operations, production, and post-mortem and ante-mortem condemnation (for poultry). Also discussed are changes and trends in the commercial slaughter industry compared to historical data. The data was obtained through inspectors from the Food Safety and Inspection Service (FSIS) and USDA.
